This coffee is a blend of pink bourbon lots from three different producers: Raul Diaz, Carlos Benavida, and Francisco Quijano. Each producer processes a bit differently, but many of the producers in La Argentina carefully pick the cherries when they’re ripe, and return even after the harvest to pick the remaining unripe and over-ripe cherries from the trees to keep them from attracting coffee borer beetles and other pests. The coffee is de-pulped coffee and fermented in either open tanks, or sealed barrels- usually for somewhere between 24-48 hours. It’s usually washed once, and then taken to a dryer- many in the region have parabolic dryers.
