Let us begin by saying that this coffee is what you need in your cup this summer. It’s complex, fruit forward, and refreshing. It carries intense flavors of melon and florals with some nice subdued lemon acidity. It is really really tasty as filter, espresso, and we are especially loving it as cold brewed over ice.
This coffee is part of a strong movement that has been gong down strong in Ethiopia. Breaking off from the standard Ethiopian Coffee Exchange (ECX) model, this coffee has 100% transparency straight back to the producers. We now where this coffee came from, and how it has gotten here. We are stoked that this movement is happening more and more in Ethiopia and we are excited to continually support it, and the people behind it. This coffee was picked by hand when the cherries were at their peak of ripeness. The cherries were mechanically removed from the seeds, fermented in clean water for 48-72 hours, dried on raised beds for 12 days, and then rested for 4 weeks before going to the dry mill to remove parchment. The end result is nothing short of amazing, and we think you will feel the same.
