Our first Honduran of the season and we are pumped. Classic sweetness and acidity compliment the silky mouthfeel of this coffee. We think this one really shines as an espresso just as much as it does through a filter. Very happy as well to be our first year working with this female producer who is doing and exceptional job. We think her double fermentation technique that requires so much more effort has paid off greatly.

Maria Antonia Ramos produced this micro-lot on a 22 acre farm called Brisas del Congolón located in Gualcince municipality within the department of Lempira. In 2010, Maria was able to purchase the farm and started planting coffee.

Processing Detail

Maria uses her own micro-mill, cherries are carefully harvested and sorted. Red cherries are fermented in plastic bags for 36 hours, then depulped and fermented in tanks for another 72 hours. After this prolonged two-step process of fermenting, the coffee was washed and then gently dried on cement patios for 16 days.

The Exporter

Maria collaborates with an export company called BICAFE, which operates a warehouse and dry-mill in Santa Rosa de Copan. Weather conditions in Santa Rosa are ideal for storing parchment and the dry-mill is specifically designed for sorting micro-lots. The partnership has helped to improve quality, increase earnings from coffee sales, and strengthen the family’s livelihood.
