This is an Excelso grade microlot from the San Jose farm located in the Sandona municipality of the Narino department of Colombia. It was harvested by Carmela Ramos at an altitude of 1900 masl and is entirely Castillo variety. Coffees go through a 14 hour fermentation before being washed and dried on raised beds for 15 days. It is screen 14 up. From here, the coffee is carefuly sorted to ensure only the highest quality seeds are off to sale.
This will be our second coffee from one of our favorite producing partners in Colombia, AZAHAR Coffee. Azahar is quickly becoming one of the top producers in the region. They have been really great to work with regardless of the fact that we are only able to buy a small quantity from them at a time. Their transparancy from seed to roaster has been nothing short of amazing as well. They are able to provide us with more information than we could ask for up front, which in turn allows us to do the best job we can at the roaster.
The coffees from Azahar all tend to be very clean, with fruit shining through in such a way that it is hard not to taste what the coffee is telling you. We hope that this will be a long time patner of ours, and that we can continue to bring you the best quality Colombian coffees from them that we can find.
