Cati Simón Polinar is one of the warmest, most grounded, fiercest souls we’ve ever met. As half of the “boots on the ground” team for Swift Coffee Sourcing, she knows nearly every coffee producer in Northern Peru, and visits them regularly to provide support and education. When it came time for her own farm, she chose to name it after her dearly-departed Black Lab dog, “Black Coffee”. Supported by her partner Angel Noriega and his best friend Dionicio, whose farm at Finca La Encañada smiles across at hers from opposite slopes, she planted her trees with care. 2025 marks the first full harvest from these young trees, and each year will only improve in quality as possibly the most knowledgeable trio in Peruvian coffee refine the processing and see the trees mature.

*We roast Monday-Wednesday. Please note that all retail orders ship USPS ground and usually take 2-4 business days to arrive depending on location. For all 5lb bag orders, please advise that due to our roasting schedule, if your order for a 5lb bag comes in on Wednesday after 10am, or later in the week, we may not have enough coffee on hand to fulfill your larger order, and will revert to the next Tuesday to ship you out fresh coffee.
